    Roast Chicken Legs W Fresh Herbs

    I made this tonight (Sunday 6 October 2013) for Tom and me - I had some lovely fresh herbs and had chicken legs to cook - found this recipe among my bookmarks, and here is the result. (see photo posted here and at recipe page).

    This was delightful and so easy. There is a really powerful punch of herbs along with perfectly juicy succulent chicken legs, which are cheap to buy here. I gave it 50 minutes in the hot oven and let it sit to keep warm for 20 minutes before serving with mushrooms. I will add this to my 'rotation' as it couldn't have been easier and it's economical too, despite the hot oven - obviously you can bake other dishes at the same time lower down.

    Slight tweaks:
    Used what herbs I had - thyme, rosemary, (didn't have marjoram/oregano), fresh bay, sage and parsley.
    Put most of the herbs under the chicken as well as some on top.
    Added a little chicken stock, and juice of 3/4 lemon (leftover from last night's dinner).
    Used baby potatoes instead of baking ones.

    The link at the top of your string links to the recipe. There needs to be a link on the recipe comments page to link back to this string so one can go back and forth between the string and the recipe. It helps the recipe or the string from getting lost in all of the hundreds of pages of strings in this IMI group.

    The date on the recipe string comment page is not necessary but helps one know more accurately the history of the recipe string comments.
    The date on the IMI group strings seem to be kept pretty accurately by the resident software but not so good on the recipe strings.
