Honey Cakes

- 2 1/2 cups flour shopping list
- 1/2 teaspoon baking soda shopping list
- 2 1/2 teaspoons baking powder shopping list
- 1 1/4 teaspoons allspice shopping list
- 1 teaspoon ground cinnamon shopping list
- 1/4 teaspoon nutmeg shopping list
- 1 teaspoon ground ginger shopping list
- 4 eggs, beaten; of course freah is best so I found a place to buy them on a farm shopping list
- 1 1/4 cups granulated sugar, I use raw sugar shopping list
- 1/2 cup safflower oil, any oil will do, the closer to the source you can get the better shopping list
- 1 cup raw honey, i get this delievered, but I bet you could find it at a farmers market shopping list
How to make it
- Preheat oven to 350ºF.
- Grease and flour a 9x13 baking pan.
- Combine all ingredients in a large bowl, stirring well.
- Pour into pan, and bake for 45 minutes.
- About 30 minutes in I open the ove and sprinkle just a touch of raw sugar on top to give it a finished look.
- Finish cooking it.
- Serve unfrosted.

- Notes: Yield: 1 cake
- Use for: Imbolc
- If cut into twelve equal pieces, each piece has approximately 270 calories.

- I had at one time cresent moon shaped cake pans. I had 13 of them. My origianl recipe fit perfect into these. Lost those too in the van. They too were my Grandmothers, I have no idea where to find replacements. sigh
