Mexican Rice

- 1 1/2 teaspoons vegetable oil shopping list
- 1/2 small onion, diced shopping list
- 2/3 cup long-grain white rice shopping list
- 1/2 teaspoon cumin shopping list
- 1/2 teaspoon chili powder shopping list
- 3 ounces canned diced tomatoes shopping list
- 1 teaspoon salt shopping list
- 1 1/2 cups water shopping list
How to make it
- Heat oil in large saucepan over medium high heat.
- Stir in onion and saute until translucent.
- Pour the rice into the pan.
- Stir to coat the grains with oil.
- Mix in cumin, chili powder, tomatoes, salt and water.
- Cover.
- Bring to a boil.
- Reduce heat to low.
- Cook at a simmer for 20 to 30 minutes OR until rice is tender.
- Stir occasionally.
