Ingredients
  • 1 1/2 teaspoons vegetable oil
  • 1/2 small onion, diced
  • 2/3 cup long-grain white rice
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 3 ounces canned diced tomatoes
  • 1 teaspoon salt
  • 1 1/2 cups water

Directions
  1. Heat oil in large saucepan over medium high heat.
  2. Stir in onion and saute until translucent.
  3. Pour the rice into the pan.
  4. Stir to coat the grains with oil.
  5. Mix in cumin, chili powder, tomatoes, salt and water.
  6. Cover.
  7. Bring to a boil.
  8. Reduce heat to low.
  9. Cook at a simmer for 20 to 30 minutes OR until rice is tender.
  10. Stir occasionally.
