How to make it

  • In a bowl, soak oats in buttermilk for 15 minutes.
  • Stir in egg, sugar and oil.
  • Combine flour, baking powder, baking soda and salt; stir into oat mixture just until moistened.
  • Fill greased or paper-lined muffin cups three-fourths full.
  • Bake at 400 degrees for 16-18 minutes or until muffins test done.
  • Cool in pan 5 minutes; remove to wire rack.
  • Yield: about 8 muffins.

    Jan 29/17 This is a fantastic muffin. Full of great flavour and as one review had suggested they are perfect for stew etc. Served with an Asian Pulled Pork dinner which we also had smoked duck soup. They stood up great. Will be making again.

    ***** (five stars) Excellant muffin! Think cornbread type of muffin (obviously with a different texture) but made with oatmeal instead and you will appreciate what these are. They are not meant to be sweet or fruity or spiced. They are light, fluffy, wholesome oaty muffins with a touch of sweetness from the brown sugar that go well with foods you would normally serve with corn muffins (chili, stew, roasts). I however love a muffin that isn't sweet or filled with fruit and found these to be absolutley delicious warm with a pat of butter for breakfast. I did sub 1/4 c. of white whole wheat flour for regular flour and the recipe made 12 standard size muffins that cooked in approx. 14 minutes. (note: I make these with regular rolled oats ... no problems ... and often make 6 jumbo muffins baking approx. 15 minutes)
