Oatmeal muffins

    Linda, that recipe is just about identical to my oatmeal muffin recipe that I posted under my old screen name of bestcooker, so I know it's good. The only difference is a few ingredient amounts, soaking the oatmeal first (which mine doesn't call for), and mine has a bit of cinnamon in it: Brown Sugar Oatmeal Muffins

    I want to try some white whole wheat flour in mine, too, so it's good to know it worked well for you.

    I bet using buttermilk instead of regular made the muffins especially moist and I'm going to try that next time I make my recipe.

    Mommyluvs2cook, they aren't overly sweet and are good for a quick breakfast muffin :) We usually have them with vegetable soup or beef stew - yum!

    Had all the ingredients on hand, so I snatched hold of this recipe. Gave regular rolled oats a couple three whizzes in the food processor to make it instant oats. It's a good muffin. Moist, well flavored. My batch made 9. Had trouble getting them out of a sprayed non-stick coated muffin tray. They were a little too tender to get out of the tin without breaking up.
    I think a few more stirs beyond getting the batter just moist, so a little gluten structure can build up in the muffin, to make it handle better.

    Me neither, Frankie, but I've heard subbing buttermilk for regular in cakes, quick breads, and muffins makes them moister. I've never tried it, though.
