Festive Eggnog Pie

- 2 cups Pecan shortbread cookie crumbs (I use Pecan Sandies) shopping list
- 1/3 cup butter, melted shopping list
- 1/2 cup semisweet chocolate chips shopping list
- 2 1/4 cups whipping cream shopping list
- 1/3 cup sugar shopping list
- 1/2 cup bourbon or rum shopping list
- 1/2 tsp. nutmeg shopping list
- 1 envelope unflavored gelatin shopping list
- 1/4 cup cold water shopping list
- 6 egg yolks, lightly beaten shopping list
- 1 tbls. butter shopping list
- powdered sugar, nutmeg and whipped cream to garnish shopping list
How to make it
- Preheat oven to 350
- In mixing bowl, mix together cookie crumbs and melted butter
- Press firmly into 9" deep dish pie plate
- Bake for 8 minutes
- As soon as crust is removed from oven, sprinkle chocolate chips onto hot crust
- Let chips melt and spread over bottom of crust
- In top of double boiler, add whipping cream, sugar, bourbon or rum, and nutmeg and stir until blended
- Bring water on bottom of double boiler to simmer and cook for about 15 minutes or until sugar has dissolved and
- heated through
- In small bowl, sprinkle gelatin over cold water, set aside
- Whisk 1/4 of cream mixture into egg yolks
- Add to rest of cream mixture, whisking constantly
- Whisk in gelatin
- Whisk over double boiler 3-5 minutes or until gelatin dissolves
- Remove from heat
- Add 1 tbls. butter, and stir until melted
- Cool to room temp.
- Pour filling into crust
- Wrap with plastic wrap, pressing directly onto filling
- Sprinkle nutmeg and powdered sugar over pie just prior to serving
- Add dollop of whipped cream
- Chill at least 4 hours

Mmmmmm... Loving this one! Great addition of rum here, and the chocolate on the crust. Sounds so silky and luscious!
