Never had the desire to indulge in eggnog until a friend gave me this recipe...Now I enjoy it during the Holidays.

Ingredients
  • 2 cups Pecan Shortbread cookie crumbs (I use Pecan Sandies)
  • 1/3 cup butter, melted
  • 1/2 cup semisweet chocolate chips
  • 2 1/4 cups whipping cream
  • 1/3 cup sugar
  • 1/2 cup bourbon or rum
  • 1/2 tsp. nutmeg
  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • 6 egg yolks, lightly beaten
  • 1 tbls. butter
  • Powdered sugar, nutmeg and whipped cream to garnish

Directions
  1. Preheat oven to 350
  2. In mixing bowl, mix together cookie crumbs and melted butter
  3. Press firmly into 9" deep dish pie plate
  4. Bake for 8 minutes
  5. As soon as crust is removed from oven, sprinkle chocolate chips onto hot crust
  6. Let chips melt and spread over bottom of crust
  7. In top of double boiler, add whipping cream, sugar, bourbon or rum, and nutmeg and stir until blended
  8. Bring water on bottom of double boiler to simmer and cook for about 15 minutes or until sugar has dissolved and
  9. heated through
  10. In small bowl, sprinkle gelatin over cold water, set aside
  11. Whisk 1/4 of cream mixture into egg yolks
  12. Add to rest of cream mixture, whisking constantly
  13. Whisk in gelatin
  14. Whisk over double boiler 3-5 minutes or until gelatin dissolves
  15. Remove from heat
  16. Add 1 tbls. butter, and stir until melted
  17. Cool to room temp.
  18. Pour filling into crust
  19. Wrap with plastic wrap, pressing directly onto filling
  20. Sprinkle nutmeg and powdered sugar over pie just prior to serving
  21. Add dollop of whipped cream
  22. Chill at least 4 hours

Mmmmmm... Loving this one! Great addition of rum here, and the chocolate on the crust. Sounds so silky and luscious!
