Raspberry Yogurt Kuchen Recipe
A yummy eastern European take on a fruit cobbler. It has been a family favorite for over a decade.

Ingredients
  • BASE
  • 1 ½ CUPS FLOUR
  • ½ CUP SUGAR
  • 1 ½ TSP BAKING POWDER
  • 1/3 CUP SOFTENED BUTTER
  • 2 EGGS
  • 1 TSP VANILLA (OR ALMOND FLAVOURING)
  • 3 CUPS FRESH RASBERRIES OR
  • 1 – 300g PKG INDIVIDUALLY FROZEN, NOT THAWED (NOT IN SYRUP)
  • OR
  • 5 PEELED AND THINLY SLICED PEARS
  • TOPPING
  • 2 TBSP FLOUR
  • 2 CUPS PLAIN YOGURT (NOT “SET-STYLE” WITH GELATIN)
  • 1 BEATEN EGG
  • 2/3 CUP SUGAR
  • 2 TSP GRATED LEMON RIND
  • 1 TSP VANILLA

Directions
  1. COMBINE BASE INGREDIENTS AND PRESS INTO A 10” SQUARE PAN
  2. SPRINKLE WITH RASPBERRIES
  3. SPRINKLE FLOUR OVER YOGURT
  4. ADD OTHER INGREDIENTS AND MIX TILL SMOOTH
  5. POUR OVER BERRIES
  6. BAKE FOR 70 MINUTES OR TILL GOLDEN

Oh - this has to be a winner. Berries and a bit of lemon to enhance. Well done!


Thanks, I can't take the credit for the recipe my Mom found it in a newspaper ages ago. She changed it up with the pears and almond extract combo and that is a real winner in the fall.


The base sounds similar to a "platz" recipe that I make and got from my Mom. It has a crumble topping over the fruit. This sounds unique and very tasty. Thanks for the post.

Alterations


I forgot - if you use pears substitute the almond extract for the vanilla - it is out of this world good. You can also add sliced almonds to it as well.
