How to make it

  • Put butter in a heavy skillet over moderate heat. When the butter has foamed and begins to subside, it is right for the steaks.
  • Cook steaks in butter, 2 at time, turning frequently for approximately 4 minutes until medium rare.
  • Test steak by cutting a small incision in it. When correctly cooked, remove to a platter, keep warm, and continue to cook in the remaining steaks.
  • Put all the cooked steaks into the skillet. Season with salt and black pepper. Add chive, thyme, and saute for 1 minute.
  • Then add stock, rum, worcestershire sauce , and sugar and cook over low medium heat, scraping up brown congealed bits from bottom of pan.
  • Add more salt if desired and cook until syrupy.
  • Thicken sauce with 1/2 tsp cornstarch dissolved in 1 tbs of water.
  • Pour sauce over steak and serve hot.
