Ingredients

6 1-inch thick rib eye or sirloin

2 tbs chives, chopped

1 sprig thyme, minced

1 fluid oz Barbados or Trinidad Rum

1/2 cup beef stock or consomme

4 tbs butter

1 tbs worcestershire sauce

salt and pepper to taste

sugar to taste

1/2 tsp cornstarch

Directions

Put butter in a heavy skillet over moderate heat. When the butter has foamed and begins to subside, it is right for the steaks.

Cook steaks in butter, 2 at time, turning frequently for approximately 4 minutes until medium rare.

Test steak by cutting a small incision in it. When correctly cooked, remove to a platter, keep warm, and continue to cook in the remaining steaks.

Put all the cooked steaks into the skillet. Season with salt and black pepper. Add chive, thyme, and saute for 1 minute.

Then add stock, rum, worcestershire sauce , and sugar and cook over low medium heat, scraping up brown congealed bits from bottom of pan.

Add more salt if desired and cook until syrupy.

Thicken sauce with 1/2 tsp cornstarch dissolved in 1 tbs of water.

Pour sauce over steak and serve hot.
