Vidalia Onion Pie Recipe
This is one of my family's favorite side dishes.

Ingredients
  • 1 cup crushed Town House crackers or Saltines (Ritz crackers seem to be too sweet, especially with the already sweet Vidalias)
  • 1/4 cup plus 2 tbsp. melted butter, divided
  • 3 cups chopped vidalia onions
  • 2 eggs
  • 3/4 cup milk
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 cup grated sharp cheddar cheese
  • 1/8 tsp. paprika

Directions
  1. Preheat oven to 350 degrees.
  2. Combine crackers and 1/4 cup melted butter.
  3. Press into a greased pie plate.
  4. Saute onions in remaining 2 tbsp. butter.
  5. Pour onto crust.
  6. Combine eggs, milk, salt, and pepper; pour over onions.
  7. Top with grated cheddar cheese.
  8. Sprinkle with paprika.
  9. Bake uncovered at 350 degrees for 30 minutes.
