How to make it

  • Julienne carrots and celery. Dice onion. Mince garlic. Slice mushrooms. Shred cheese.
  • Peel all potatoes, placing in cold water to keep from browning. Bake potatoes in microwave, leaving in covered bowl in microwave when done.
  • While potatoes are baking, cook bacon, if using, to medium in large skillet, remove from pan, and drain pan. Cook hamburger in 1T oil with ½ tsp salt, 2 cloves garlic, and onion.
  • Meanwhile, cook rest of vegetables with thyme in separate pan in 2T butter and 2T oil.
  • Stir vegetables into hamburger mixture, add broth, Worcestershire, and white and red pepper with ½ tsp black pepper. Simmer while making mashed potatoes.
  • Heat oven to 375° and spray 3qt glass casserole.
  • Using mixer, whip hot potatoes in large bowl with milk, 6T butter, and 1 clove garlic. Mix in 1½C cheese.
  • Bring hamburger mixture to a boil then add flour and ½ tsp black pepper; cook a few minutes, stirring, until thickened.
  • Transfer to baking dish; top with mashed potatoes. Bake, uncovered, for 25 min.
  • Meanwhile, shred bacon.
  • Take pie out when done and sprinkle with cheese. Top with bacon and/or paprika if using. Let stand until cheese is melted.
