Ingredients
  • 6 cups French bread cubes, toasted
  • 2 cups 2% evaporated milk
  • 3 large eggs, lightly beaten
  • 1 cup sugar
  • 1 (15-oz.) can pure pumpkin
  • 1/2 cup raisins
  • 1/2 cup chopped pecans, toasted
  • 2 tsp pumpkin pie spice
  • 1 tsp grated orange rind

Directions
  1. Place bread cubes in a lightly greased 11 x 7 x 1 1/2 inch baking dish.
  2. Stir together remaining ingredients, and gently fold into bread cube mixture.
  3. Bake at 350 F for 50-60 minutes or until set. Serve with whipped cream if desired.

I have to save this for Thanksgiving... Awesome!


You're welcome. If you sprinkle sugar (especially coarse sugar) on top before baking you get a lovely, sparklely, crunchy top too.


I love the idea of this, but I don't really like pumpkin. It's on my list to try this fall but I'll more than likely be trying this with a different winter squash variety or sweet potato.
