Chicken Fiesta Casserole

- 1 deli roasted chicken, meat removed and chopped into small pieces shopping list
- 1/4 cup water shopping list
- 1 can Rotel tomatoes and chilies shopping list
- 1 jar White Con Queso cheese dip shopping list
- 1 package taco seasoning shopping list
- 6 cups dorito or other tortilla chips shopping list
- 1 c. grated onion shopping list
- 1 small can sliced black olives shopping list
- 2 c. grated cheddar cheese shopping list
How to make it
- Mix taco seasoning with water.
- Place chicken pieces and black olives in bowl and mix with taco mixture.
- In a blender, blend together the Rotel, onions, and Con Queso Dip(about 30 seconds).
- Place 3 cups of the tortilla chips in the bottom of a casserole dish.
- Spoon 1/2 of the chicken mixture over the chips.
- Spoon 1/2 of the sauce over chicken mixture.
- Top with 1 cup of the cheddar cheese.
- Repeat to make second layer.
- Cover and bake at 350 degrees for 30 to 35 minutes.
- Top with extra tortilla chips(crushed) and/or sour cream before serving if desired.
