How to make it

  • Preheat oven to 400. Wash the apricots,cut in half and remove pits.
  • Butter 6 1 cup ramekins.
  • In electric mixer,put flour and sugar and a pinch of salt;while mixing,add the eggs one by one'then the milk,then the single cream and finally the rum.
  • Lay the apricot halves evenly over the bottom of each dish;pour over the batter.
  • Bake for about 30 mins;serve warm

    I had read something about pouring a small amount of batter into the baking dish initially, baking it 10 m or so (would have to check Julia Child), and *then* proceeding--gives it the suggestion of a bottom crust. Other than that, YUM!
