Apricot Clafoutis Recipe
Creamy apricot batter-pudding. Delicious. Can use other fruits.

Ingredients
  • 1lb. ripe apricots
  • 5oz. flour
  • 1/2lb. sugar
  • 4 eggs
  • 3oz. milk
  • 5Tbs. rum
  • unsalted butter for the dishes
  • pinch of salt

Directions
  1. Preheat oven to 400. Wash the apricots,cut in half and remove pits.
  2. Butter 6 1 cup ramekins.
  3. In electric mixer,put flour and sugar and a pinch of salt;while mixing,add the eggs one by one'then the milk,then the single cream and finally the rum.
  4. Lay the apricot halves evenly over the bottom of each dish;pour over the batter.
  5. Bake for about 30 mins;serve warm

I had read something about pouring a small amount of batter into the baking dish initially, baking it 10 m or so (would have to check Julia Child), and *then* proceeding--gives it the suggestion of a bottom crust. Other than that, YUM!
