Ingredients

How to make it

  • Rub the fillets with kosher salt and set aside in a non-reactive bowl
  • Combine onion, lime juice, orange juice, jalapeno, sugar , cilantro leaves and tequila, I just put it all in the blender.
  • Put filets and mixture into zip lock bag marinade for 2 hours in refrigerator.
  • Remove the fillets from the marinade and set it aside.
  • Transfer remaining marinade to a saucepan and heat untill it is reduced to about 3/4 cup. you may want to start this while fish is reaching room tempiture.
  • Pat the fillets dry with paper towels and lightly coat wit the olive oil.
  • Heat grill to med-high and place the fillets over direct heat until they are just cooked thouugh-opaque at the center but still moist, approximately 3-4 min per side.
  • Serve with marinade sauce and extra cilantro on top.
  • ENJOY

    This sounds so delicious grilling really brings out all those great flavors of the Mahi Mahi one of my favorite kinds of fish.
