Grilled Mahi-Mahi Ceviche-Style

- 4 skinless mahi-mahi filets, approximately 2 pounds shopping list
- 2 tsp kosher salt shopping list
- 1/2 diced red onion shopping list
- 1/4 cup freshly squeezed lime juice shopping list
- 1/4 cup of orange juice shopping list
- 1 tbs minced jalapeno shopping list
- 1/4 cup dark brown sugar, packed shopping list
- 1/4 cup tequila shopping list
- 1 tbs olive oil shopping list
- 1/4 cup freshly chopped cilantro leaves shopping list
How to make it
- Rub the fillets with kosher salt and set aside in a non-reactive bowl
- Combine onion, lime juice, orange juice, jalapeno, sugar , cilantro leaves and tequila, I just put it all in the blender.
- Put filets and mixture into zip lock bag marinade for 2 hours in refrigerator.
- Remove the fillets from the marinade and set it aside.
- Transfer remaining marinade to a saucepan and heat untill it is reduced to about 3/4 cup. you may want to start this while fish is reaching room tempiture.
- Pat the fillets dry with paper towels and lightly coat wit the olive oil.
- Heat grill to med-high and place the fillets over direct heat until they are just cooked thouugh-opaque at the center but still moist, approximately 3-4 min per side.
- Serve with marinade sauce and extra cilantro on top.
- ENJOY
