How to make it

  • Brown beef, onion and garlic.
  • Add taco seasoning mix and ro-tel tomatoes.
  • Season with salt and pepper.
  • Spray crock pot with non-stick spray.
  • Dip 2 tortillas in enchilada sauce and place in bottom of crockpot.
  • Spoon 1/2 of meat mixture on top of tortillas & sprinkle with mexican or co-jack shredded cheese.
  • Repeat layers once more.
  • Top with final 2 tortillas.
  • Combine soup, milk & remaining enchilada sauce.
  • Pour over top of casserole.
  • Sprinkle with remaining cheese.
  • Cook on low for 4 to 5 hours.
  • 10 mintures before serving, top with sliced tomatoes and chopped green onions.
  • Serve with sour cream if desired.

    This was delicious! The whole family LOVED it and went back for seconds! Next time I'd like to add another 1/2 pound of meat or add some veg like corn, bell peppers or zucchini and make an extra tortilla layer. There was plenty of sauce so I'd keep the other amounts the same and just add more cheese in the layer. I cooked it on low for 2 hrs and keep-warm for two hours.

    Sounds good! My crockpot really really saves me time. I didn't know about the non-stick spray; thanks for the tip. Spagetti sauce really sticks in the crockpot, but taste so much better. I LUV mexican food!
