Ingredients

How to make it

  • Preheat oven to 180 degrees
  • Mix rhubarb, sugar and vanilla in a bowl and spoon into a smallish ovenproof dish
  • Mix the extra sugar and flour together
  • Using your fingers, mix in the butter
  • Add the coconut and almonds to the crumble mix and spoon onto the rhubarb mix.
  • Bake for 40 minutes
  • Serve with icecream or cream.

    Sounds so good. I can't wait to try it...My problem is that I can't get rhubarb here in California at the moment.......My hubby loves rhubarb. We are trying to grow it....
    As soon as I find some rhubarb I will certainly try it................
