I love scallops AND prosciutto... only wished I could afford the prosciutto! As for using the bacon, I always precook my bacon a little before wrapping the scallops... THEN I Pretend it's prosciutto! teeheehee! :)

I love the idea of prosciutto instead of bacon. I saw Emeril make bacon wrapped scallops and he seared them in a fry pan and the bacon only cooked on the edges, leaving a raw strip of bacon through the middle. Yuck. Using a salt cured meat like the prosciutto is ideal, you don't have to worry about "raw" around the middle but you still get the salty meaty flavor. Bravo!

I too love Scallops and it sounds great, but please would you tell me what Prosciutto is? Is it a sheet of Pasta? I am only guessing here Cheers Doreen
