How to make it

  • Let cheeses come to room temperature.
  • In a large mixer bowl beat together cream cheese and sour cream until smooth.
  • Add in swiss and cheddar, onion, pimento (undrained) pickle relish, half the bacon, half the pecans, salt and pepper.
  • Cover and chill until firm.
  • Shape into one large or two small balls on waxed paper.
  • In a small bowl combine remaining bacon, pecans, parsley and poppy seed.
  • Turn out on wax paper.
  • Roll cheese ball in seed mixture to coat.
  • Wrap and chill.
  • Let stand 30 minutes at room temperature before serving.
