Mushroom and Tortellini Soup

- 2tsp olive oikl shopping list
- 2 med carrots,cut into 1/4' dice. shopping list
- 1 rib celery,in 1/4" slices shopping list
- 1 garlic clove,minced shopping list
- 2tsp tomato paste shopping list
- 8oz. mixed wild mushrooms shopping list
- 4c beef broth shopping list
- 1Tbs dry sherry(optional) shopping list
- 1/4tsp dried thyme shopping list
- 1/2tsp kosher salt shopping list
- 3c frozen cheese tortellini shopping list
How to make it
- In large potover med-low heat,combine olive oil,carrots,celery,and garlic. Cover pot,cook,stirring occasionally until vegetables are tender,about 15 mins.
- Raise heat to medium,add tomato paste and stir 1 min. Add mushrooms,broth,sherry,thyme,salt and 2 cups water. Cover and bring to boil. Add tortellini and cook 4 mins or till tender.
