Ingredients
  • ½ stick butter
  • 4 boneless, skinless chicken breasts
  • 1 package good smoked sausage, casing removed and sliced
  • 1 medium onion, chopped
  • 1 cup chopped celery
  • ½ cup diced green bell pepper
  • 1 tablespoon minced fresh garlic
  • 1 small can tomato sauce
  • 1 large can diced tomatoes
  • 2 bay leaves
  • 2 tablespoons Chef Paul Prudhomme?s Poultry Magic seasoning
  • 2 cups chicken stock/broth
  • Cooked rice

Directions
  1. In a large Dutch oven, melt butter; add chicken and cook until chicken is almost done.
  2. Add sausage, onion, celery, bell pepper and garlic.
  3. Cook, stirring often, until sausage takes on some color and the vegetables are tender.
  4. Add tomato sauce, diced tomatoes, bay leaves and seasoning.
  5. Pour in chicken stock.
  6. Bring mixture to boil; reduce heat and simmer 30 to 45 minutes. Serve over hot rice.

I've never made Jambalaya! I'll have to try this! Is there anything more natural that I can sub for the poultry seasoning?


OMG!!! 10 Forks! I made this exactly as written! I couldn't find Chef Prudhommes's seasoning so I used a different brand, but it worked fine! I love the taste of the kielbasa in combination with the chicken. It gave the entire dish a nice smokey flavor. I'm so glad I tried this recipe! Thanks Sparow and Miss Olivia! I hope you like the photo!


Wow sounds so much easier than mine! I like the - cant believe I am saying this - since it sounds so food network - lol, but I like the flavor profiles you got going on here!
