Broccoli Cheese Soup Recipe

Love this creamy, cheesy, comfort food soup...this is so easy to throw together quick after work some night and so yummy!

Ingredients
- 1 medium carrot, shredded
- 2 or 3 medium potatoes, diced
- 1/2 small onion, chopped fine
- 2 cups chicken broth
- 1 head broccoli, chopped
- 1 can (10.75 oz) cheddar cheese soup
- 2 cups half & half or milk
- 1 cup shredded cheddar cheese
- 1 Tbsp oleo
Directions
- Combine first 4 ingredients in large saucepan. Bring to a boil, reduce heat to simmer.
- Add chopped broccoli, cover and cook for 20 minutes, until vegetables are tender.
- Combine soup and milk and add to saucepan. Add cheddar cheese and warm until melted.
- Season to taste with salt and pepper and add oleo.

This is wonderful! I made it for lunch today and even the picky kids liked it. I had yet to find a cream of broccoli soup that I would make again but this one will be a new go to recipe for me. Thanks Negirl. I will post a photo later.

Just delicious....doubled the recipe and left out the oleo. I also pureed the soup, but made sure to leave many chunks of the veggies for texture. Thanks NE!!
