Shoe Peg Corn Salad

This is an awesome salad tried and true. I got this from a co-worker over 20 years ago and it is on my dinner table at least monthly if not more. Great pot luck dish. Enjoy
Ingredients
- 20 ounce can shoe peg corn drained shopping list
- 2 tomatoes chopped shopping list
- 1 bell pepper seeded and chopped shopping list
- 1 cucumber peeled and chopped shopping list
- 1 purple onion chopped shopping list
- 1/2 cup sour cream shopping list
- 4 tablespoons mayonnaise shopping list
- 2 tablespoons white vinegar shopping list
- 1/2 teaspoon celery seed shopping list
- 1/2 teaspoon dry mustard shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 2 teaspoon salt shopping list
How to make it
- Combine corn, tomatoes, bell pepper, cucumber and onion then set aside.
- Combine sour cream, mayonnaise, vinegar, celery seed, mustard, pepper and salt and mix well.
- Combine corn mixture and sour cream mixture then cover and refrigerate overnight.
