How to make it

  • Preheat oven to 350. Place rice in large,shallow baking dish. Stir in lemon peel and raisins. Arrange chicken in one layer on top of rice. Sprinkle with salt and pepper.
  • Heat oil in large skillet. Saute onion and garlic until soft. Stir in curry powder and cook 2 mins. more. Stir in chicken broth and cream and bring to a slight boil. Pour over chicken.
  • Cover tightly and bake for 1 hour,or till chicken and rice are tender.

    I made this with some changes, but we still loved it! I used bone in, skin on chicken breasts & rubbed them with curry powder. I sautéed some onion in olive oil and butter, adding golden raisins, then curry powder, and, finally, some unsalted pistachio nuts and the rice, stirring to coat just until the rice became opaque. I didn’t have any cream but used a combination of half & half, coconut milk, and skim milk (finishing up what I had on hand). After the rice was done, I took the cover off and cooked it until the breasts were cooked through (they took longer than boneless skinless) and golden & crispy on the top; the rice had a crunchy top, too. Yum!
