How to make it

  • Choose slender, young beans and wash them/
  • Snap or cut off the ends and snap or cut the beans into peices, about 1-inch long.
  • Boil them for 8-10 minutes, or until they are tender.
  • Drain the water, then set the beans aside with the lid on.
  • Select 10 or cardamom seeds and grind them to a medium-fine powder with a mortar and pestle.
  • Add this powder to the green beans, along with butter/oil and herb salt to taste.
  • These beans go well in a menu with her Tomato Aspic (page 6 of the book), Cucmber soup (page 19), Garlic Sandwiches (page 79) and fresh peaches with wheatgerm bars (page 98).
