How to make it

  • Clean, rinse and pat-dry the chicken. Trim off extra fat deposits. Set aside and start working on the marinade.
  • Mix all marinade ingredients together well.
  • Slide your fingers under the chicken skin to loosen it. Work the marinade in between the skin and the meat. work what is left into the outside skin of the chicken. Truss the chicken up and let marinate overnite, or at least 4 hours.
  • When you are ready to cook the chicken, preheat the oven on to 425 degrees. Place the chicken on a roasting rack in a shallow roasting pan. Add about one cup water to the pan, this will help keep the smoking down and adds extra moisture to the meat. Roast for about 18-20 minutes per pound. When done pierce the chicken with a fork to see if the juices run clear.
