My take on a traditional preparation of a Mexican style pork

Ingredients
  • 1.5 lbs pork loin
  • 1/2 teas black pepper
  • 1 T ground cumin
  • 1 T California chile powder
  • 1 T New Mexico chile powder
  • 1/2 to 1 T cayenne powder (to match your taste)
  • 1.5 teas garlic powder
  • 3 whole cloves
  • 1" piece whole cinnamin, preferrable Mexican
  • 1 teas oregano
  • 2 T fresh lime juice
  • 1/2 c canola or soy bean oil
  • For serving:
  • 12 corn tortillas
  • cilantro sprigs
  • chopped onion
  • chopped tomato
  • frsh or pickled jalapeno slices
  • lime slices

Directions
  1. Butterfly the loin to a thickness of 1/4 inch. Place the meat in a small roasting pan. Add the spices, chile powders, cayenne, herbs, lime juice and oil to the meat. Mix well. Cover pan with plastic wrap and marinade for 6 to 24 hours.
  2. Pre heat oven to 350 F. Cover the pan with tinfoil and roast for 45 minutes. Check after 40 minutes. The pork will easier flake with a fork when done. Remove and let cool slighty. Remove meat from pan and break into small pieces.
  3. To serve quickly saute the meat until hot. Spoon into a warm corn tortilla. Add a sprinkle of onion and tomato pieces, a cilantro sprig and a squeeze of lime. Jalapenos if liked. Roll up and enjoy.
  4. Guacamole and salsa can be served on the side.

Looks like a fantastic dish, (between you and me I don't think angelinaw looked real close at your ingredients) I on the other had did and it looks like a great dish.
