Hearty Meatball Soup Recipe

Ingredients

1/2 lb lean ground beef

1/2 lb bulk pork sausage

1 egg

1 1/2 tsp salt

1/8 tsp pepper

4 cups water

1 envelope (4 serving size) onion soup mix

1 can (15 oz) red kidney beans - partially drained

1 can (14 oz) stewed tomatoes

1 cup diced carrots

1 cup Minute Rice

2 Tblsp chopped fresh parsley

Directions

Mix beef , sausage, egg, salt & pepper thoroughly in a bowl

Shape into tiny meatballs

Brown slightly in a skillet

Bring water to a boil in a large saucepan & stir in soup mix

Reduce heat, cover & simmer for about 10 mins.

Add meatballs, kidney beans, tomatoes & carrots

Simmer for 15 mins longer

Stir in rice. Cover & remove from heat

Let stand 5 mins

Add parsley & serve
