Chana Masala Recipe
A quick and easy version of a great Indian vegetable stew. Serve with basmati rice and a cucumber raita. Definitely one of our favorites.

Ingredients
  • 2 cans chickpeas drained
  • 1 can chopped tomatoes with chiles (don't drain)
  • 1 onion chopped
  • 1.5 teas tumeric
  • 2 teas garam masala
  • 2 teas ground coriander
  • 2 teas salt
  • 1 teas onion seed
  • 1 teas cumin seed
  • 1/2 c chopped fresh cilantro
  • Optional - seeded and chopped chile, preferrable a serrano.

Directions
  1. In a dry pan heat the onion seeds and cumin seeds until the seeds begin to pop.
  2. Add the chopped onion and the can of tomatoes and chiles.
  3. Stir in the rest of the seasonings.
  4. Add the drained chickpeas and stir.
  5. Reduce the heat and simmer until the liquid reduces.
  6. Remove from heat and add the cilantro.
  7. Serve with rice and cucumber raita.
  8. A great variation is to substitute a thawed 10 oz block of chopped spinach for one can of chick peas. We eat this variation as much as the original.
