Chocolate Peanut Butter Coffee Cake muffins

- 1/2 cup packed brown sugar shopping list
- 1/4 cup all-purpose flour shopping list
- 1/4c. oats shopping list
- 1/4 cup peanut butter crunchy shopping list
- 3 tablespoons margarine or butter shopping list
- 1/4 cup miniature semisweet chocolate pieces shopping list

- 2 cups all-purpose flour shopping list
- 1 cup packed brown sugar shopping list
- 2 teaspoons baking powder shopping list
- 1/2 teaspoon baking soda shopping list
- 1/4 teaspoon salt shopping list
- 1 cup milk shopping list
- 1/2 cup peanut butter shopping list
- 2 eggs shopping list
- 1/4 cup margarine or butter shopping list
- 1/2 cup miniature semisweet chocolate pieces shopping list
How to make it
- For topping, in a bowl stir together 1/2 cup brown sugar and 1/2 cup all-purpose flour; cut in 1/4 cup peanut butter and 3 tablespoons margarine or butter till crumbly, add 1/4 cup miniature semisweet chocolate pieces and stir--set aside
- In a bowl stir together 2 cups flour, 1 cup brown sugar, the baking powder, baking soda, and salt. Add milk, 1/2 cup peanut butter, the eggs, and 1/4 cup margarine or butter. Beat with an electric mixer on low speed til blended. Beat at high speed for 3 minutes, scraping the sides of the bowl frequently. Stir 1/2 cup miniature semi-sweet chocolate pieces into the batter after beating.
- Pour batter into a greased muffin tins. . Sprinkle with topping mixture. Bake in a 375 oven about 30 minutes or till a toothpick inserted near the center comes out clean. Serve warm or cool (serves 16)
