Ingredients
  • 3 pounds boneless beef short ribs, cut in 2" pieces
  • 1/4 cup vegetable oil
  • 12-ounce can Coors or Budweiser
  • 16-ounces medium-hot salsa
  • 1/4 cup soy sauce
  • 3 Tablespoons honey
  • 6 cloves garlic, crushed
  • 1 1/2 Tablespoons grated fresh ginger
  • 1/2 bunch cilantro (leaves only) (for garnish)

Directions
  1. Preheat oven to 350*F.
  2. Trim ribs of excess fat and silverskin.
  3. In a large skillet over medium heat, warm the oil.
  4. Add the ribs, in batches, and brown on all sides.
  5. Remove from skillet, set aside.
  6. Transfer browned ribs to a 9x13-inch baking dish.
  7. Add remaining ingredients, except cilantro, and mix well.
  8. Cover tightly with foil; bake for 1 1/2 hours, stirring occasionally.
  9. Remove foil and bake 30 minutes longer or until ribs are tender and sauce is thick.
  10. Garnish with cilantro.
