Fettuccine With Assorted Mushrooms Recipe Marriage / All my dishes

Mushrooms are a new found love, I fell in love with them while pregnant with my second child. I look for recipes with them in it and this one is very tasty and quick to make.

Ingredients
  • 1 pound fettucccine
  • 1/4 cup olive oil
  • 1/4 cup of diced onion
  • 3 cloves garlic, chopped
  • 1 pound of assorted mushrooms thinly sliced ( I believe you should use what you like )
  • 1/4 pound bacon, sliced into 1/2 pieces
  • 4 oz. mascarpone cheese
  • 1/4 cup freshly grated parmesan or Romano cheese
  • 1/4 cup fresh flat-leaf parsley chopped
  • Salt and pepper to taste

Directions
  1. In large pot cook fettuccine per package
  2. In a large skillet of heat the olive oil over medium high heat.
  3. Add the onion and garlic and cook until fragrant.
  4. Add the bacon and stir for 1 minute.
  5. Add the mushroom to cover the pan, season with salt and pepper and cook undisturbed until browned on the bottom,
  6. Continue to cook until mushrooms are tender.
  7. When pasta is done reserve 1 cup of the pasta water
  8. Drain pasta well.
  9. Add ingredients from skillet to the fettuccine
  10. Stir in the mascarpone cheese and reserved pasta water , stir until sauce is creamy.
  11. Add and stir in the parmesan then spinkle with fresh parsely
