Fettuccine with Assorted mushrooms

- 1 pound fettucccine shopping list
- 1/4 cup olive oil shopping list
- 1/4 cup of diced onion shopping list
- 3 cloves garlic, chopped shopping list
- 1 pound of assorted mushrooms thinly sliced ( I believe you should use what you like ) shopping list
- 1/4 pound bacon, sliced into 1/2 pieces shopping list
- 4 oz. mascarpone cheese shopping list
- 1/4 cup freshly grated parmesan or romano cheese shopping list
- 1/4 cup fresh flat-leaf parsley chopped shopping list
- salt and pepper to taste shopping list
How to make it
- In large pot cook fettuccine per package
- In a large skillet of heat the olive oil over medium high heat.
- Add the onion and garlic and cook until fragrant.
- Add the bacon and stir for 1 minute.
- Add the mushroom to cover the pan, season with salt and pepper and cook undisturbed until browned on the bottom,
- Continue to cook until mushrooms are tender.
- When pasta is done reserve 1 cup of the pasta water
- Drain pasta well.
- Add ingredients from skillet to the fettuccine
- Stir in the mascarpone cheese and reserved pasta water , stir until sauce is creamy.
- Add and stir in the parmesan then spinkle with fresh parsely
