How to make it

  • In large pot cook fettuccine per package
  • In a large skillet of heat the olive oil over medium high heat.
  • Add the onion and garlic and cook until fragrant.
  • Add the bacon and stir for 1 minute.
  • Add the mushroom to cover the pan, season with salt and pepper and cook undisturbed until browned on the bottom,
  • Continue to cook until mushrooms are tender.
  • When pasta is done reserve 1 cup of the pasta water
  • Drain pasta well.
  • Add ingredients from skillet to the fettuccine
  • Stir in the mascarpone cheese and reserved pasta water , stir until sauce is creamy.
  • Add and stir in the parmesan then spinkle with fresh parsely
