Creamy Seafood Pasta With Feta Cheese Recipe

I hope you will enjoy this creamy pasta dish I experimented with today. You can use a pre-packaged medley of seafood or create your own combination

Ingredients
  • 1 lb Fettuccine pasta
  • 1 large red bell pepper - seeded, halved & sliced into thin strips
  • 3 - 4 cloves garlic - crushed & chopped small
  • 4 Tblspns olive oil - divided
  • 1/4 cup butter
  • 2/3 cup crumbled Feta cheese
  • 340g pkg Sea Quest Seafood Medley - thawed - or similar combo. See note below
  • 12 ex-large shrimp - cut into chunks
  • 1/2 tsp Old Bay seasoning
  • Approx 2 1/4 cups whipping cream or half & half
  • 1/4 cup water mixed with 2 Tblspn corn starch
  • Chopped spring onions - for garnish - optional

Directions
  1. Cook Fettuccine while preparing sauce - Drain & set aside
  2. Empty the thawed pkg of seafood into a strainer to drain - reserving the liquid
  3. In a deep skillet, heat 2 Tblspns of the olive oil & add the red bell pepper & garlic
  4. Saute for 3 mins taking care not to let the garlic burn - turn out into a bowl & set aside
  5. Heat remaining 2 Tblspns of olive oil in the skillet & add the seafood , shrimp & Old Bay seasoning
  6. Cook on medium heat for about 10 mins, stirring often
  7. Add the red pepper/garlic mixture & mix well - set aside & keep warm.
  8. In a separate deep skillet on low heat, melt the butter & add the Feta cheese
  9. Simmer until blended - the Feta cheese will remain slightly crumbled
  10. Place reserved seafood liquid in a measuring cup & add enough cream to make 2 1/2 cups
  11. Add this to the butter/Feta cheese mixture - stir well
  12. Mix the water & corn starch together & slowly add to the cream mixture
  13. Stir over low heat until mixture becomes thickened & bubbly
  14. Add seafood mixture & stir to blend
  15. Add cooked Fettuccine & toss until well coated with sauce
  16. Turn out onto serving platter & garnish with chopped spring onions

  19. NOTE:-
  20. SeaQuest Seafood Medley is a wonderful mixture of shrimp, squid, octopus, cuttle fish, clams & mussels & can be found in the frozen fish section of your Super market. Other combos may be available in your area
  21. You may prefer to make your own mixture of seafood. You'll need about 350g + the extra shrimp
  22. If so, make up approx 1/2 cup of fish stock to replace the liquid in the packaged seafood
