Ingredients

6 Salmon Steaks

3 Garlic Cloves,thinly sliced

4 Medium Shallots,thinly sliced

1/2 Cup Fresh Ginger,sliced

3/4 Cup Safflower Oil

3 Tablespoons Soy Sauce,light

2 Cup Chicken Stock

3/4 Cup White Wine

1/3 Cup Lemon Jucie,Fresh

1 Cup Grapefruit Jucie,Fresh

1 Cup Orange Juice,Fresh

Pinc of Sea Salt,and Ground Pepper,Fresh

Directions

In pan place 1 Tablespoon Safflower Oil,bring up the heat to allow the oil to become hot.

Add the garlic,challots,ginger,and cook until soft,about 5 minutes.

Add the soy sauce,chicken stock,white wine,lemon juice,grapefruit juice,and orange juice.

Bring mixture to a boil,watch and stir from time to time,and reduce to a syrupy stage,leaving about 1/2 cup of mixture,cooking about 45 minutes.

With a very fine sieve,strain mixture,pressing to release the extract from the solid.

Place in blender and add the oil,blend until combined.

On light oiled grill pan,Grill the salmon steaks until Medium rare,turn once.

~Serve with sauce over top~
