Warm Quinoa Salad

- 1 cup quinoa, rinsed shopping list
- 2 cups water or stock shopping list
- salt and pepper to taste shopping list
- 1 medium onion, chopped shopping list
- 3 cloves garlic, chopped shopping list
- ¼ cup chopped fresh basil shopping list
- ¼ cup chopped fresh coriander (cilantro) shopping list
- 1 tomato, seeds and excess pulp removed and chopped shopping list
- 1 can adzuki beans, rinsed well shopping list
- 4 TBS lemon juice shopping list
- 3 TBS olive oil shopping list
- 3 cups shredded romaine lettuce shopping list
- 1 avocado cubed shopping list
- 1 TBS chopped pumpkin seeds shopping list
- salt and pepper to taste shopping list
How to make it
- Combine rinsed quinoa, water, onion, garlic, and a little salt in medium saucepan and turn heat to high. Bring to a boil, cover, lower the heat to low, and simmer gently for about 15 minutes. Fluff with fork and transfer to a bowl. Add chopped herbs, tomato, rinsed adzuki beans, 2 TBS lemon juice, 1 TBS olive oil, salt and pepper.
- Toss romaine and avocado in rest of lemon juice and 2 TBS olive oil. Season with salt and cracked black pepper. Serve quinoa on bed of salad greens. Sprinkle with chopped pumpkin seeds.
