Overnight Blueberry Coffee Cake Recipe
I like this recipe when I have guests because I can make it the night before and it's all ready to go into the oven in the morning.

Ingredients
  • 2 cups all purpose flour
  • 1 cup sugar
  • 1/2 cup packed brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 2/3 cup butter, melted
  • 2 eggs, beaten
  • 1 cup fresh or frozen blueberries
  • Topping:
  • 1/2 cup packed brown sugar
  • 1/2 cup chopped nuts
  • 1 tsp ground cinnamon

Directions
  1. In a large bowl, combine flour, sugars, baking powder, baking soda, cinnamon and salt. In a separate bowl, combine buttermilk, butter and eggs; add to dry ingredients and mix until well blended. Fold in berries.
  2. Pour into a greased 13 x 9 inch baking pan.
  3. Combine topping ingredients; sprinkle over batter.
  4. Cover and refrigerate overnight.
  5. In the morning, uncover and bake at 350 for 45 to 50 minutes or until cake tests done.

This sounds like a truly useful recipe to have in one's repertoire. I'm going to try it with raisins.
