Strawberry - Pecan -Cake

- 1 box white or yellow cake mix (approx 18 t0 20 ounces) shopping list
- 1 cup vegetable oil shopping list
- 4 large eggs shopping list
- 1 cup flaked coconut shopping list
- 1 pack (3 oz) strawberry flavoured gelatin shopping list
- 1/2 cup milk shopping list
- 1 cup mashed fresh strawberries or frozen ( if frozen , drain some juice off and reserve) shopping list
- 1 cup chopped pecans shopping list
- STRAWBERRY cream cheese icing shopping list
- 1 Pack (8 oz) cream cheese, room temp shopping list
- 2 oz margarine, room temp shopping list
- 1 teaspoon vanilla extract shopping list
- 1/2 cup chopped pecans shopping list
- 1/2 cup mashed strawberries (drain and reserve juice) shopping list
- 5 to 6 cups sifted powdered sugar (1 to 1 1/2 pounds) shopping list
How to make it
- Preheat oven 180c / Gas 4
- Generously grease and flour 3, 8 or 9 inch round layer pans
- Mix cake mix with strawberry flavored gelatin. Add eggs, coconut, and milk, and beat well until well blended
- Stir in 1 cup of mashed strawberries and 1 cup of pecans
- Bake for approx 35 minutes, or until when lightly touched with finger it springs back.
- TO MAKE ICING
- Cream together cream cheese and butter, mix in the vanilla and the powdered sugar until a firm but spreadable consistency is achieved
- Stir in drained strawberries and pecans
- Drizzle cooled layers with reserved juice then spread with a layer of icing
- Ice sides and top
- refrigerate
