Pizza Quiche

- 1 unbaked 9 inch pie shell, we did not use this shopping list
- 2 cups mozzarella cheese, shredded - we used low fat shopping list
- 1 cup cheddar cheese, shredded - again as low fat as possible shopping list
- 1 cup montererrey jack cheese, shredded - low fat also shopping list
- 3/4 cup pepperoni pieces, we made one with this and one without as I am not fond of pepperioni, we used italian sausage in mine, yes I know it has lots of fat!! shopping list
- 4 ounces mushrooms, drained - or we used fresh shopping list
- 1 tablespoon olive oil shopping list
- 1/2 cup onion, finely chopped - we used red to add color to the quiche shopping list
- 2 cloves garlic, minced shopping list
- 1 cup whole milk - we used 1 percent and it worked out fine shopping list
- 3 eggs shopping list
- 1 teaspoon italian seasoning shopping list

- we also used pizza sauce with lots of veggies in it to top the quiche with before serving, the kids thought it was the cats meow! But this is just an option. shopping list
How to make it
- Preheat the oven to 400 degrees f.
- Sprinkle cheeses in bottom of the pie crust.
- Tope with pepperoni and mushrooms.
- In a heavy skillet, saute the onions and garlic in the olive oil until crisp tender.
- Spoon over the mushrooms in the pie crust.
- In a medium bowl, combine milk, eggs, and italian seasoning until well blended and pour gently over the other stuff in the pie crust (or just the smal casserole dish for us).
- Bake quiche at 400 degrees for 40 to 45 minutes or until a knife inserted near the center comes out clean. Just like any other custard...
- Let stand 10 minutes before serving.
- Slice it pretty and we served it with a little bit of pizza sauce on it and a side salad wit h fat free dressing. it was to good to be real!

That is definitely a great looking quiche - and the quiche crust is less carbs than a bread crust! I had to print this off so I can make it soon - sounds delish...thanks!
PS - just realized you used no crust at all...better yet - I will try it ...morekrumkake in Chicago Suburbs loved it -
Sounds yummy! My hubby thinks Quiche is one of those sissy sounding names but I bet he would suck this one down if I didn't tell him what it was called.
