CHICKEN BRANDADO This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Jennet Estate in Allen, Texas in 1983.

Ingredients
  • 2 boneless skinless chicken breast halves
  • 1 clove garlic minced
  • 2 tablespoons butter
  • 1/2 cup dry white wine
  • 1/4 cup brandy
  • 1/2 cup whipping cream
  • 1 egg yolk slightly beaten
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon freshly ground black pepper

Directions
  1. Cook chicken and garlic in butter in medium skillet 15 minutes turning once.
  2. Add wine and brandy but do not stir.
  3. With a long match ignite brandy mixture then shake pan until flame goes out.
  4. Cover then reduce heat and simmer 15 minutes then remove chicken to platter and set aside.
  5. Combine remaining ingredients stirring well then add to pan juices.
  6. Cook over medium heat stirring constantly until thickened and bubbly.
  7. Pour sauce over chicken then serve immediately.
