Ingredients

How to make it

  • Drizzle large non-stick skillet with Olive Oil, add butter
  • Chop chicken, and add to skillet with butter has melted
  • Add onion, pepper, chiles, and seasonings
  • Whne chicken is done and veggies are soft, remove from heat. Shred chicken
  • Preheat oven to 350
  • Drain chicken mixture if needed, and mix with artichokes, cream cheese and moozzerella (and drained spinach if using)
  • Place 1/8th of the mixture in each tortilla and roll
  • Place seam side down in greased bakcing dish
  • Sprinkle with Mexican cheese and tomatoes
  • Cover with foil and bake 20-25 minutes until heated through
  • Serve with salas, guacamole, and sour cream
