Chicken Artichoke Burritos

- olive oil shopping list
- 2 T butter shopping list
- 2 onions, thinly sliced shopping list
- 1 red pepper, thinly sliced shopping list
- 4 boneless, skinless chicken breast halves shopping list
- 1 package dry fajita seasoning OR 2 t chili powder, 1 t cumin, dash cayenne pepper, seasoned salt, garlic pepper shopping list
- 1 6-oz jar marinated artichokes, crained and chopped shopping list
- 1 small can green chiles, drained shopping list
- 1 8oz pacakge cream cheese, softened shopping list
- 8-inch flour tortillas shopping list
- 1 c grated mozzerella shopping list
- 4 c grated Mexican white cheese shopping list
- 1 1/2 c chopped roma tomatoes shopping list
- ***Some times I wilt some spinach, and add fresh mushrooms to the onions and peppers*** shopping list
How to make it
- Drizzle large non-stick skillet with Olive Oil, add butter
- Chop chicken, and add to skillet with butter has melted
- Add onion, pepper, chiles, and seasonings
- Whne chicken is done and veggies are soft, remove from heat. Shred chicken
- Preheat oven to 350
- Drain chicken mixture if needed, and mix with artichokes, cream cheese and moozzerella (and drained spinach if using)
- Place 1/8th of the mixture in each tortilla and roll
- Place seam side down in greased bakcing dish
- Sprinkle with Mexican cheese and tomatoes
- Cover with foil and bake 20-25 minutes until heated through
- Serve with salas, guacamole, and sour cream
