Ingredients
  • 1/2 cup butter, melted
  • 1 1/2 cups graham wafer crumbs
  • 1 pkg flaked coconut
  • 1 can Regular or Low Fat Eagle Brand®
  • 1 pkg semi-sweet chocolate chips
  • 1/2 cup creamy peanut butter
  • *** I use extra crunchy peanut butter and I use shortbread cookies crumbled up for the crust instead of the graham crackers. Good stuff!

Directions
  1. Preheat oven to 350 degrees
  2. Combine crumbs and melted butter; press into parchment paper-lined 13 x 9 inch baking pan. (Or use Reynold's Non-stick aluminum foil to line the pan.)
  3. Top evenly with coconut, then Eagle Brand.
  4. Bake in preheated 350ºF (180ºC) oven 25 minutes or until lightly browned.
  5. In small saucepan over low heat, melt chocolate chips with peanut butter.
  6. Spread evenly over hot coconut layer.
  7. Cool 30 minutes; chill. Cut into bars.
  8. Store covered at room temperature.
  9. *After you chill the bars, consider cutting them into small cubes and setting them out in a candy dish instead of serving them as you would a brownie square. (Use a wet knife to cut though the chilled bars for easier slicing.)

This sounds very yummy, and looks beautiful, Annie! What are you adding by Eagle brand here, it says 1 can regular or low-fat Eagle brand. Is it condensed milk?

These look really great! I am slowly but surely catching up on all the good stuff I missed for about 6 weeks. Can't wait to see what else you have posted!!!
