Cake In A Cup Recipe
OK, I haven't had time to try this out for myself, but a friend e-mailed this to me and it sounded fun, so I'm passing it along. Would like some feedback, if you try it.

Ingredients
  • SPICE CAKE
  • .
  • 4 Tablespoons all-purpose flour
  • 3 Tablespoons sugar
  • 2 Teaspoons spice (cinnamon, ginger, whatever you like. Add more/less if you want!)
  • 1/8 Teaspoon baking powder
  • 1 Egg white
  • 3 Tablespoons milk (or soy milk)
  • 2 Tablespoons vegetable oil
  • 1/4 Teaspoon vanilla extract
  • 1 Microwave-safe bowl or mug

Directions
  1. Mix flour, sugar, spice and baking powder
  2. Mix in egg white
  3. Pour in milk, oil and vanilla, and mix well
  4. Put in microwave for 2.5 minutes (add 30 sec if necessary) on maximum power (1000 watt)
  5. Wait until it stops rising and sets in the bowl/mug

  13. 5 tbs all-purpose flour
  14. 2 slightly rounded tbs unsweetened cocoa powder
  15. 2 slightly rounded tbs sugar
  16. 1/8 tsp baking soda
  17. 1/8 tsp salt
  18. mix these ingredients together and add
  19. 3 tbs milk
  20. 2 tbs oil
  21. 1/4 tsp vanilla
  22. 1/4 tsp white vinegar
  23. mix it all up and heres the great part... lick the spoon or have your kid lick the spoon... no eggs, no worries.
  24. you can add come chocolate chips or nuts now if you want
  25. put it in the microwave for 1 minute, maybe 1 and a half. check it at one though.... since there are no eggs it cooks really fast... if the top is bouncy and a fork stuck in it comes out clean, its ready. Its good! with a scoop of ice cream dumped right into the mug.

  29. Get a large coffee mug and put in:

  31. 6 Tbs all-purpose flour
  32. 2 Tbs sugar (brown or white depending on your taste, I used brown)
  33. 1/4 tsp baking soda
  34. 1/8 tsp salt
  35. 1/4 tsp cinnamon
  36. 1/8 tsp nutmeg

  38. mix your dry ingredients up with a fork and then add:

  40. 4 Tbs orange juice
  41. 2 Tbs oil
  42. 1/4 tsp vanilla
  43. 3 Tbs finely grated carrot
  44. 1 Tbs chopped pecans (optional)
  45. 1 Tbs raisins (optional)

  47. mix it all up and make sure its mixed all the way to the bottom (don't want flour lumps!) and put it in the microwave for 2 or 2 and a half minutes. Let it cool a little and eat it. It's really good with cream cheese and honey

  50. ''Vanilla Cake''

  52. Get a coffee mug (a standard 8 or 12 ounce one works just fine) and put in:

  54. 6 Tbs all-purpose flour
  55. 2 rounded Tbs sugar
  56. 1/2 tsp baking soda
  57. 1/8 tsp salt

  59. Mix it all up with a fork and add:

  61. 4 Tbs milk
  62. 1 Tbs oil
  63. 1/2 tsp vanilla

  65. mix it all up really well and make sure there are no flour lumps at the bottom of the cup. Microwave it for 2 minutes and the minute it comes out of the nuke put a handfull of chocolate chips on top. Wait five minutes and your chocolate will have melted so you can spread it around for frosting. Give it a few more minutes before you eat it, or it will be very warm still.

  67. You could forgo the chocolate at the end and after mixing everything together just before you cook it you could add a couple tablespoons of frozen wild blueberries for a blueberry muffin in a cup...

These are great! I have tried the chocolate and the kids loved them, to eat and to make them.


I did try the chocolate one, But I had a mess the batter went all over the cup! Sure smelt good though! I have no idea what I did wrong, but then I can burn water! LOL
