Quick Cream of Mushroom Soup

- 1/2 lb mushrooms, finely chopped shopping list
- 1 rib of celery, finely chopped shopping list
- 1 small onion, leek or shallott, finely chopped shopping list
- 2 Tbsp butter shopping list
- 2 Tbsp flour shopping list
- 2 cups good chicken broth shopping list
- 1/2 cup cream or half and half shopping list
- salt and pepper shopping list
How to make it
- In a small pot melt the butter when hot, add the vegetables and cook until tender.
- Sprinkle the flour in the pan and stir to mix thoroughly.
- Add the chicken broth and bring to a boil. Lower heat and let simmer 15 minutes.
- Add the cream or half and half and heat almost to boiling. Taste and correct seasoning.
- Serve or thicken with more flour to make a sauce.

This is a great recipe. I always feel guilty using canned soup --(too much salt) in recipes. I don't always have cream in my frig but I found the evaporated milk makes a good substitute
