Quick Cream Of Mushroom Soup Recipe
A very easy, quick and much better tasting soup that can be used to make sauces. Use flour mixed with butter to get the thickness that you need for your recipe.

Ingredients
  • 1/2 lb mushrooms, finely chopped
  • 1 rib of celery, finely chopped
  • 1 small onion, leek or shallott, finely chopped
  • 2 Tbsp butter
  • 2 Tbsp flour
  • 2 cups good chicken broth
  • 1/2 cup cream or half and half
  • salt and pepper

Directions
  1. In a small pot melt the butter when hot, add the vegetables and cook until tender.
  2. Sprinkle the flour in the pan and stir to mix thoroughly.
  3. Add the chicken broth and bring to a boil. Lower heat and let simmer 15 minutes.
  4. Add the cream or half and half and heat almost to boiling. Taste and correct seasoning.
  5. Serve or thicken with more flour to make a sauce.

This is a great recipe. I always feel guilty using canned soup --(too much salt) in recipes. I don't always have cream in my frig but I found the evaporated milk makes a good substitute
