How to make it

  • Coat garlic with oil and bake at 375 degrees for 30 minutes or until soft and golden.
  • Cover a 13x9-inch foil-covered metal pan with tortilla chips.
  • Mash and distribute garlic, onion, chiles and olives evenly over chips.
  • Cover with cheese and bake at 400 degrees for 5 minutes or until cheese melts.
  • Top with cilantro and green onion and serve.
  • Note: I think it is easier to bake whole heads of garlic and then squeeze the softened garlic out into a dish to mash. To do this, slice and discard a little of the root end of the garlic bulb and drizzle with a little olive oil. Then wrap in foil and bake until soft.

    My son-in-law's family lives in Gilroy, and my daughter has had the pure pleasure of attending the Garlic Festival twice now (she is a huge fan of garlic, thank goodness!)...this recipe sounds delish, and another Must Try for sure. Keep those apps coming, connor!
    PS - daughter tried the garlic ice cream - said it was just "ok"...I think I would have to pass on that one, too...

    Yes Michelle I roast the garlic heads whole then press them through a potato ricer like a giant garlic press.
