Artichoke Pie

- 2 pkgs. frozen artichoke hearts, divided shopping list
- 4 Tbsp. butter shopping list
- 1/2 cup chopped onion shopping list
- 1 Tbsp. flour shopping list
- 1/2 cup half and half shopping list
- 1/2 cup sour cream shopping list
- 4 eggs, beaten shopping list
- salt, pepper to taste shopping list
- 1/4 tsp. nutmeg shopping list
- 2 tsp. minced parsley shopping list
- 1 baked 9" pie shell shopping list
- 1/2 cup cheddar cheese, shredded shopping list
- 1/2 cup swiss cheese, shredded shopping list
- 1/4 cup parmesan cheese, grated shopping list
How to make it
- Cook artichoke hearts as directed on package. Drain and set aside.
- Melt butter and add onion and cook until onion is transparent but not browned.
- Stir in flour until well-blended and add half and half.
- Cook and stir until thickened.
- Combine sour cream, eggs, salt and pepper, nutmeg and parsley and add to the sauteed onions.
- Place a layer of artichoke hearts in the bottom of the pie shell.
- Sprinkle Cheddar cheese over the top.
- Add another layer of artichokes and top with Swiss cheese.
- Pour egg mixture over layered artichokes and top with Parmesan cheese.
- Bake at 350 degrees for 45 minutes.
