Green Chicken Chimis

- Filling- shopping list
- 3 chicken breast shopping list
- chicken bouillon cube shopping list
- salt to taste shopping list
- pepper to taste shopping list
- garlic powder shopping list
- 1 jalapeno, seeded and diced small shopping list
- 1/2 yellow onion diced shopping list
- sauce- shopping list
- 1 can of green enchilada sauce shopping list
- 1/4-1/2 cup of heavy cream shopping list
- handful of chopped cilantro shopping list
- 1 small can of diced green chiles shopping list
- pinch of oregano shopping list
- garlic powder shopping list
- 12 flour tortillas shopping list
- mexican cheese blend shopping list
- guacamole shopping list
- shredded lettuce shopping list
How to make it
- In a saucepot, add chicken breast, chicken bouillon cube, and salt and pepper. Let boil until chicken is cooked. remove chicken and chop.
- In another sauce pan, add enchilada sauce, green chiles, cilantro, and oregano and garlic powder. Add salt to taste if it needs it. Let simmer.
- In a large sauce pan, add a little vegetable oil, add onion, and jalapeno. Let cook then add chopped or shredded chicken, season to taste. letting it fry a little. Add a little of the enchilada sauce to "get it kinda wet" then set aside. (DOnt add the cream yet to the sauce or filling, the cream is just for the sauce that goes on top). Also, dont add to much sauce to the fillng because u dont want it to get the tortilla soggy when u fry.
- Heat oil in a large saucepan about 4inches deep. The way i test it is if when i stick the end of a wooden spoon in the oil, bubbles form around it, its ready. Add a generous amount of filling to each tortilla, Roll like a burrito, and fasten with a toothpick, continue with all tortillas, until filling is done. I usually have enough filling for about 8-12 chimis. Then add them about 3 or four at a time to hot oil, DOnt add to many at once. Let fry turning to let it get crisp and golden. Drain on paper towels.
- Turn heat off to sauce, and add cream, stir well and check seasonings. To the plate, add the chimis, sauce, and top with cheese. U can microwave if u like to melt cheese. Microwave for about 10 secs. top with shredded lettuce, sour cream or/and guacamole.
