How to make it

  • Rub potatoes with oil and bake at 450 for about 1-1/2 hours. Or until a fork easily penetrates to the center.
  • Cut baked potatoes in half. Cut them so they will lay flat as halves.
  • Scoop out the center of the potatoes with a spoon leaving 1/4 inch of potato meat around the edges.
  • Mash the potato pulp and combine with warm milk, garlic powder, salt, pepper and butter. Blend with a mixer until smooth.
  • Place potato shells in a baking dish large enough to hold them in a single layer. Fill with the potato mixture.
  • Top with onion/chive, bacon and shredded cheese.
  • Microwave or broil until cheese is melted and mixture is heated through.

    Hey Dugger! Good to see you posting---yours are always right on. This is the way I do mine---nothing like a twi---I mean a RE-baked tater!LOL

    This was one of those things we wanted to try but never had. Browsed my cookbooks to find a basic recipe I could modify. Found this in an appliance cookbook. Added a few tweaks and then did it twice to be sure I had the right mixture. Hardest thing was to get the directions right so a cave man could do it. :)
