Just thought I'd let you know we make this around once a month or so now. Also works great with pork, which is what I am making it with tonight!

This was very good! I needed something quick and easy for lunch today and had some thawed chicken so I decided to make this. Will definitely make it again, especially since my picky 2 year old even liked it! I used the mayo to coat the chicken and used boneless skinless thighs instead of breasts.

Hi - I know this will be good because it is similar to how I cook fish - chicken will be a good change (always hungry after fish!) Thanks.
