Potato Bread

- 2 cups of warm water (her note says save water from boiled potatoes) shopping list
- 2 pkgs of yeast shopping list
- 1/4 cup of sugar shopping list
- 1 Tbsp of salt. shopping list
- 1 cup of mashed russets potatoes (peeled boiled cooled, reserve cooking liquid) shopping list
- 1/2 cup of softened butter shopping list
- 3 1/2 cup of flour shopping list
- 4 cups or more of flour shopping list
How to make it
- Her recipes are quite sparse with directions.
- Dissolve the yeast in the warm water with the sugar and salt.
- Let it proof 10 minutes.
- Mix the potatoes and butter together, add proofed yeast and the initial 3 1/2 cups of flour.
- Mix with electric mixer on med speed until smooth about two minutes.
- add remaining four cups of flour and knead for 10 minutes.
- Return to a greased bowl and let rise until double
- Punch down, and make into loaves.
- Bake at 375 degrees for 40 minutes.

It has been at least five years since I made a potato bread this sounds wonderful and the aroma while baking is always welcome.

I love potato bread - makes such good buns for sandwiches, too...I have sworn to learn how to make bread this year. This looks like a great place to start...love your grandma's comment on the recipe card!
