How to make it
- Mix the warm water, honey, and yeast together. Proof for 10 minutes
- In a large bowl combine flour, salt, and oil. Mix well
- Add yeast water. MIx.
- Knead bread for 7-8 minutes using a little bench flour if needed. Dough should be slightly tacky, soft, and pliable.
- Brush surface with a little oil, cover with a cloth and left rise in a warm space until doubled in size.
- Preheat oven to 500 F with a pizza stone on the middle rack
- Punch down the dough and divide into 6 equal pieces
- Roll out one of the piece to a 10-12" circle then stretch the dough out a little more. Use a little bench flour if needed.
- Transfer the circle to a piece of parchment paper.
- Use a fork to pierce the surface of the dough all over
- Lightly brush with cold water (as light as possible)
- Sprinkle with 1 teas each: minced garlic, Kosher salt, Italian seasoning
- Sprinkle with 2 teas Parmesan cheese
- Place on stone and bake for 6-7 minutes. Bread will bubble slightly and should be toasted (remember it is a cracker)
- Remove from Parchment paper (and reuse for another loaf) and cool on a rack.
- When cool, break into pieces and serve with your favorite dips.
- Note: you can score the loaf before cooking to break it into regular sized pieces.
- Substitute equal parts brown and white sugar mixed with cinnamon for the garlic,Italian seasoning, salt, and Parmesan. A sweet treat.
