Ingredients
  • 1 2 lb. strip loin trimed
  • 6 cloves of garlic
  • salt and pepper to taste
  • 2 onions sliced
  • pinch of oregano
  • olive oil for sauteing
  • Crumbled blue cheese
  • 4 good pumpernickel rolls

Directions
  1. Make 6 slits in your loin and insert the garlic cloves
  2. Salt and pepper the loin liberally
  3. Place loin in a roasting pan and place in a pre-heated 400 hundred degree oven after15 min. reduce heat to 350 and continue to roast to desired doneness allow loin to rest at least 15 min.
  4. in a sautee pan heat olive oil
  5. add onions to the pan add oregano to taste and carmelize the onions
  6. After loin has rested slice it as thin as you can
  7. place steak on rolls add carmelized onins top with the blue cheese and top of roll place back in oven to melt the cheese
  8. Serve with you favorite steak sauce
  9. Enjoy
